Well folks, if your weather is anything like ours, the summer months have finally caught up.
Warm weather brings with it a certain…lacking in wanting to cook. Really, does anything sound less appealing than standing in front of a stove when it’s 90 degrees out?
Didn’t think so.
In fact, I’m wholly convinced that this is the reason it’s easier to lose weight in the summer. I don’t want to cook and I don’t want to make or eat anything warm.
Anyone else out there? Just me?
I’ve got a delicious recipe to share today that will help you beat the summertime heat! It’s light, delicious, and has bacon!
Seriously, is there anything that bacon can’t make better?
Don’t get me wrong though. There are probably thousands of variations of this recipe. And they’re probably all delicious. This is my take on a old classic and it has made itself a permanent spot on our summer rotation.
Bacon Broccoli Salad
B and I have pretty hectic schedules between work, time spent at the barn, and building up our blogs. He’s still in the formation stages of his, but it’s a lot of work still.
This tends to mean that we don’t have a lot of down time. Meal prepping once a week definitely helps keep us rolling along and I will always recommend it!
If you don’t know what meal prepping is or want to know how to make it work for you, don’t worry! I’m planning on coming out with some tips and tricks to help you make meal prepping successful for your life. But, for right now a quick overview…
Meal prepping is the idea of preparing your meals/snacks/etc in bulk for the entire week. Or, if you’re like me, you do it for your workdays. Either way, you batch prepare meals and then grab and go during the week.
I’ve found that this method is a huge time saver in general, so I’m really excited to share some of my tricks with you all!
But anyways, back to this delicious salad.
Tossed in a creamy dressing with crunchy bits of bacon and cheese, this broccoli salad is a sure winner. Broccoli has the added bonus of not just being healthy, but it’s also a very durable addition to any salad. The slight amount of vinegar in the dressing doesn’t impact the crunch of the broccoli in the salad, even after several days.
Now, normally even I get a little bored of eating the same things each day. Not with this salad!
I kid you not, I would happily eat this for weeks if I didn’t have so many recipes I want to make. Either way, this one’s sticking around.
The recipe as I made it is pretty simple and straightforward, but you’re welcome to add in whatever toppings float your boat! Sunflower seeds would be amazing, green onions, chicken, let your imagination run wild! This is a good base to start from and you can make adjustments from here.

This recipe is short and sweet, so let’s dive in.
First off, you’ll need broccoli. I used about 3 stalks that were medium/large sized in mine. Wash and pat them dry before chopping them into bite sized florets. Chop up the stems and use those too! They add a nice crunch into the salad. Toss all your lovely chopped broccoli into a big mixing bowl and move on to the next step.
Now, remember when I said this is a kind of…create your own adventure broccoli salad?
This is where that comes in. I used bacon and a plain cheddar cheese mix, but feel free to get creative here!
I cheated and bought the bag of real bacon bits from the store. In the end, they taste just as good as when I cook bacon at home, but with none of the cleanup or waiting time to cook. So yeah, I cheated. Sprinkle your bacon and your favorite cheddar cheese over the top of the broccoli and get ready to mix it all up!
Next, mix up your dressing.
The dressing, like the rest of this salad, is simple. Mix together your mayonnaise, sesame oil (I used toasted sesame because that’s what I had in the cupboard), white wine vinegar, garlic and onion powder, and pepper.
Pour your dressing over your broccoli salad mixture and stir away until all those lovely florets and stems are coated.
Low Carb Broccoli Salad with Bacon
- Serves: 8
- Serving size: .5 cup
- Calories: 331
- Fat: 31
- Carbohydrates: 4

- Protein: 10
- 2-3 large heads of broccoli, cut into bite size chunks
- ¼ lb bacon, cooked and chopped
- 1-2 cups grated cheese of choice
- 1 cup mayonnaise
- 2 tbsp white wine vinegar
- 2 tsp toasted sesame oil
- Garlic and Onion powder to taste
- Black pepper to taste
- Cook and chop up your bacon. Or, if you're like me- cheat and buy the bag of bacon bits.
- Wash, trim, and cut your heads of broccoli into bite sized pieces.
- Mix the mayonnaise with the vinegar, oil, and spices. Adjust as needed to your individual tastes.
- In a large bowl, mix together the broccoli, bacon, cheese, and dressing. Stir until well combined.
- * For best flavors, I like to let this sit in the refrigerator overnight before eating. Or, divide it into containers and take it for lunch throughout the week!
